Niagara Food & Wine Expo serves up some tasty pairings

NIAGARA FALLS, Ont.  – There is no denying that the right wine and cheese pairing creates a classic, unmatched flavour sensation that will add some pizzazz to any party.

The challenge is knowing how to find the perfect combination of wine and cheese that best complement each other’s flavours. This year, Niagara Food & Wine Expo is pleased to welcome The Dairy Farmers of Canada who will be hosting seminars on Canadian cheese at the Cheese Tasting Stage. Renowned expert Deborah Levy will guide guests through a sensing of different cheese varieties, sharing knowledge of the characteristics of soft, semi-soft and firm cheeses. They will also provide some tips on caring for your cheese and advice on tasty pairings with wine and beer.

“Wine and cheese are the classic party pairing, but most folks don’t quite understand how to pair them together properly to maximize flavour,” says Jennifer Campbell, Show Manager of Niagara Food & Wine Expo. “The trick is knowing how to pair wine and cheese based on what kind of flavour you are looking for. This can all depend on the age of the cheese, where it is from, the processes it goes through, and its characteristics.”

In addition to wine and cheese pairing seminars, Niagara Food & Wine Expo also features several incredible wine classes. Wine 101 | Saturday at 4:00 pm – Get started on the path to wine expertise with VINES Editor and Founder Christopher Waters, who will lead a tasting of eight top-notch wines.

InterVin Gold | Saturday at 6:30 pm – This tasting of eight gold medal winners is your chance to sample a selection of stellar wines that the InterVin judges loved the best.

“For every great dish, there is a great wine that will make the experience of that meal even better,” says Campbell. “We are seeing more and more winemakers hosting seminars with suggestions of food pairings with their wines, so that people can get a better sense of how to pair properly.”

Toronto April 20, 2012- Coleman Lemieux & Compagnie (CLC) proudly presents the world premiere of From the House of Mirth, directed and choreographed by James Kudelka from May 9 through May 13 at its new home, The Citadel.

Kudelka turns to America’s Gilded Age and Edith Wharton’s 1905 novel, The House of Mirth, as inspiration for his latest work. From the House of Mirth is a music/dance/theatre collaboration with original score by Rodney Sharman and libretto by Alex Poch-Goldin, featuring both choreography and theatrical direction by Kudelka.

Telling the story “not as a ballet,” says Kudelka, “not as an opera, and not as a sung play,” each of the art forms picks up the thread in turn. When the dance can no longer support the complexity of the drama, other devices take over the storytelling. When images need to be captured in a moment or themes presented in all their subtlety, Kudelka’s refined yet passionate choreography takes the focus. When emotions swell to the breaking point, the live music fills the space and carries us along its own intricate journey.

The novel tells of Lily Bart’s tragic descent from the glittering social circle of 1890s New York to poverty and a solitary death, her dreams of marriage – whether for wealth or love – shattered by convention and by her own conflicted desires.  Kudelka’s challenge has been to create a vocabulary of movement, music and theatre that can evoke the story’s moral issues, while illustrating the heroine’s inner life and her relationships to the men that help her, make demands on her and would save her.

Singers and the dancers appear together on stage, but only the male characters cue the story through song; the female characters are silent, danced by four of Canada’s finest performers. The artists involved are dancers Victoria Bertram, Laurence Lemieux, Claudia Moore and Christianne Ullmark; singers Scott Belluz (countertenor), Graham Thomson (tenor), Alex Dobson (bass-baritone) and Geoffrey Sirret (baritone). They are accompanied by a 5-piece chamber orchestra: John Hess on piano, Kathryn Tremills on harmonium, Sanya Eng on harp, Parmela Attariwala on violin and Carina Reeves on cello. Hess is also the Music Director.

The whole evening is presented as a salon concert, staged in intimate venues including private homes. Plans are currently underway to tour it to The Mount, Edith Wharton’s home in the Berkshires, for the 150th anniversary of Wharton’s birth.

James Kudelka is widely acknowledged as one of North America’s most innovative choreographers. His mastery of both classical ballet and modern/contemporary dance has earned him commissions from companies as stylistically diverse as American Ballet Theatre, Chicago’s Hubbard Street Dance and Les Ballets Jazz de Montréal. Kudelka’s work covers an impressive range, from virtuoso pas de deux, through large-scale and always arresting adaptations of such classics as Swan Lake, The Nutcracker and Cinderella, to boldly innovative creative collaborations with dancers, designers and musicians. After nine distinguished years as artistic director of the National Ballet of Canada (1996-2005), James Kudelka continues to undertake collaborative projects that engage and challenge him as a choreographer. In 2008, Kudelka became CLC’s Resident Choreographer.

Coleman Lemieux & Compagnie, founded in 2000 by Bill Coleman and Laurence Lemieux, creates both intimate, small-scale performances and spectacular stage shows featuring some of Canada’s greatest dancers, as well as now-legendary site-specific events in both urban and rural settings.

I had arrived early and was welcomed the moment I entered so we were off to a good start. I sat down and ordered coffee while waiting for Bill to arrive and the server seemed to be very sharp and on top of things.

It is now about 9:30am and Bill comes strolling in the door, has a seat and the waitress brings over the menu. I order the Ham and Cheese Omelette and Bill ordered a Crepe. This point on the service was excellent and seemed to be going smoothly, I chat with Bill about my latest project to get his opinions and thoughts for a bit and then the order shows up to the table. I am excited at this point to dip in and get my first taste of my Omellete, only to be disappointed by the fact that the meal is warm like it has been sitting for a bit. The overall taste of the Omellete was as good as I expected it to be, just not hot like it just came off the oven. Bill’s Crepe is a whole different experience, his was not warm at all and was hard like a pancake. The crepe was not even made right it was thick instead of thin like they normally are.

In terms of the service at this location it had gone from Superb to Mediocre, it was like now we have our food and if we have anything else to say it doesn’t matter. We recieved our bill and it was seperated. The waitress had assumed that we wanted seperate bills, which in this case she was wrong. Finally got the issue fixed and paid the bill.

I am not going to chalk up Cora’s as a bad spot from this one instance as I have gone there many times and enjoyed the experience quite a bit.
In terms of this visit I would rate it at 6 out of 10 but to be honest based on my previous experiences I find Cora’s to typically be a 9 of 10 Experience.

Since opening her first restaurant, Cora has changed the eating habits of an entire generation.     The adventure began in May 1987, when Cora bought a small diner in Montreal’s Saint-Laurent district.
After just a few months of operation, Cora changed the diner mission, making breakfasts her specialty. Combining fruit, cheese, cereal, omelettes, crepes and French toast, culinary magician Cora started a whole new breakfast concept in Quebec.
Inspired by family traditions, customer requests and sometimes outlandish suggestions from her children, Cora designed her new breakfasts to coincide with the new trends toward healthy eating. One by one, she improved the traditional breakfast dishes and then conjured up a hundred others.
Every new creation merited its own colourful illustration, which was then posted on the wall of the little Côte-Vertu diner. The menu imagery was used in the now-famous signage that still decorates each Cora restaurant.
Soon, the little Côte-Vertu establishment grew to be such a success that the boss’s children had to quit school to help out. Even back then, going out for breakfast at Chez Cora Déjeuners was a morning gastronomic adventure par excellence.
Cora sales philosophy: “Offer the highest quality ingredients and service, give people the best and they will come. If we serve the best breakfasts in town, why would they go somewhere else?”. Very quickly, Cora’s reputation for great breakfasts far exceeded the small diner’s capacity to meet demand. So the family decided that mom would open a second Cora, while her children managed the little Côte-Vertu establishment. In February 1990, the new restaurant on Saint Martin Boulevard in Laval generated a lot of press, reinforcing the success of the new breakfast concept.  A few months later, partnering with a former co-worker, Cora opened a third establishment in a large, defunct restaurant that was three times the size of the first two. The success of this new restaurant quickly led to the opening of five more Chez Cora Déjeuners. The Cora family continued to grow and several new partners were introduced to the secrets of successful entrepreneurship, with the founder’s children being the first to train the new business partners in the foundations of this winning formula.
Today, the Cora family includes over 120 franchised restaurants. And the adventure is just beginning!

The staff at Beaver and Bulldog are very polite and in terms of service they were definitely on their game!

I ordered Top Sirloin Steak with Mashed Patatoes as they had that as their special. I will be honest from my past experiences the food quality was based on what you ordered, I find that their chicken wings are absolutely amazing and to die for, but the steak was pretty average. The overall taste of the steak wasn’t terrible but it wasn’t anything special either. I decided to try it out again to give it another shot to see if its any better. Since it was a special I thought that maybe they had improved it.

I must say there was a change and not for the better, there was peppercorn on the steak and to the point that you would ask if you would like some steak with your peppercorn sauce. The part that was disappointing was that I can tell the steak itself was tender and cooked exactly to my liking. My friend Joe got the Kung Pao Stir Fry and of course his was PERFECT. I seriously wish I ordered his meal.

My overall experience would be 6.5 of 10 and I would still go back but more for drinks and chicken wings (I swear they are one of the best for that). It really isn’t too shabby they just need to get some more lights in there to get rid of the bar feel and make it more like a sit down restaurant.

The Niagara Food & Wine Expo is back!

NIAGARA FALLS, Ont. – The Niagara Food & Wine Expo is returning for its second year at the Scotiabank Convention Centre.

“The Niagara Region is known for its world class wine and with the success of last year’s Expo, it was a natural to come back and celebrate the great wine and food that the region has to offer,” said Jennifer Campbell, Show Manager of the Niagara Food & Wine Expo. “We love being able to showcase the tremendous talent from the region as well as bring in the more exotic and lesser known wines and food from around the world.”

The Expo, which runs May 25th to May 27th at the ScotiaBank Convention Centre in Niagara Falls, will be welcoming over 150 exhibitors to the show this year.

New to the lineup will be exhibitors from around the world as well as some from closer to home.

“We’re thrilled to be welcoming Carlsberg Canada and Lake of Bays Brewing to the already fantastic beer offerings this year,” said Campbell. “Wine lovers will be able to try out the latest from Colaneri Estate Winery, Lailey Vineyard and Southbrook Winery as well. This is the perfect chance to taste something new from an exhibitor that you may have heard of, but have never got around to trying,” said Campbell.

For those with a sweet tooth, chocolatiers from Marshville Chocolates, one of the Niagara Region’s hidden gems, will be at the Expo for the first time, alongside several other local food favourites.

Also of note is Mott’s booth where Caesar will be king. Those that favour the iconic Canadian drink can’t miss out on what Mott’s Clamato is offering this year.

“One of the things that everyone loves about the Niagara Food & Wine Expo is how there is always something for everyone. If you’re a beer drinker, wine connoisseur, spirits aficionado or foodie, chances are we will have something to please and surprise everyone,” said Campbell.

In addition to the taste sensations, live jazz, soul and classical music will be played throughout the show with performances by The Shea D Duo featuring Peter Shea and Juliet Dunn, Jesse Parent, Tyler Gifford, Melissa Bel and more.

The last time I was there was Thursday March 29th 2012. I went with a friend for dinner and I ordered a salad with chicken, my friend ordered the steak dinner which was of no surprise to me because whenever we go somewhere she orders steak. I found that my food was satisfactory for the most part but found the music to be a bit loud but not too overbearing which was good. The waitress that night was not consistant but not to the point I would complain, in fact the longer we were there the better she got. We started off on the back burner but as time went by she was more on the ball to the point that I didnt even have to ask for a refill they would just pop up as I finished my current drink, so slow start but a great finish.

I noticed that the staff is still quirky but not as quirky as they use to be but it wasn’t just this visit that i’ve noticed that, it seems that it changed a bit in general.

If the question is how would I rate the performance overall, my rating would be 7.5 of 10 and I would reccomend this restaurant to others who are looking for a place to mellow out and shoot the shit with friends. I dont think this would classify as a great date spot but for friends hanging out grabbing beer and catching up it is the perfect spot!

Usually I order there California Chicken Salad and I must admit the dish is a real treat but tonight the server had mentioned to me that the prime rib was fresh out of the oven. Hearing that its fresh out of the oven im sure you can guess it is exactly what I ordered. My friend Max had wanted to order his usual which is the Chicken Malsala and it was not in the menu any longer. The waitress was trying to explain that they had a test menu out there to try new things and get peoples feed back from them and that was the reason that some items had disappeared. The fact that I am in business myself and know how the politics of it works I decided to call her out on it and I stated that it probably wasnt a hot seller. I was right of course and she admitted that some of the less popular items were the ones removed from the menu. Max chose the Mango Chili Steak Salad as a replacement to his usual order, which he said wasnt really up to his expectation and isnt a dish that suited him. On the other hand the waitress was completely on track with my prime rib dish OMG I would have ordered two if I was actually able to eat it, I have no regrets about ordering it what so ever even if it wasn’t the healther choice of my two choices.

In terms of acutal Service, our waitress was pleasent and for the most part on the ball. I found that the intervals between checking on us was a tad bit too far apart but not to the point that we were searching for her but enough for us to notice.

Conclusion to this experience is that I still had a great time and would rate this visit as an 8.5 of 10 and reccomend this location to anyone who is interested in trying out Milestones.
